The Evolution Series is our exploration into barrel aged and out there beers. A departure from the regular Fossil Cove lineup, the Evolution series utilizes wood, time, special ingredients, funk, and a collective effort from the brewing team. Tasting Room exclusive, limited release, not always available.
Evolution Series 1.0: Wine Barrel Aged Chocolate Stout
Chocolate Stout
ABV: 8.4% IBU: 35
Complex notes of chocolate, fruit, vanilla, and roasted malt.
Aged 15 months in red wine barrels with KYYA Chocolate Madagascar cacao nibs added.
Evolution Series 2.0: O.D.B.
Oatmeal Double Brown Ale
ABV: 9.5% IBU: 55
Notes of bourbon, vanilla, brown sugar, cherry, oak, and dark fruits.
Aged in bourbon barrels.
Evolution Series 3.0: T-Rex on Peaches
Belgian-style Tripel
ABV: 9.7% IBU: 8
Notes of candied peach, oak, banana, vanilla, and stone fruit.
Aged in wine and bourbon barrels with 70 lbs of Ozark peaches added.
